Saute:
- 1 onion
- 16 oz chopped mushrooms
- 1 zucchini, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 1 T dried thyme
- 1 tsp red pepper flakes
- 1 tsp ground nutmeg
- 2 T soy sauce
- salt and pepper
Pulse in food processor:
- 1 c rolled oats (pulse first)
- 1.5 c cooked brown rice
- 1 15 oz can white beans (or any beans) and .25 c reserve bean liquid
Drain vegetables (ideally, roll into a towel and squeeze out excess water). Add to food processor and pulse until combined. Refrigerate (ideally at least a couple of hours). Form into patties and bake at 375 for 20-25 minutes, flipping halfway. Broil each side for 1-2 minutes to crisp up.
