Saute:

  • 1 onion
  • 16 oz chopped mushrooms
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 T dried thyme
  • 1 tsp red pepper flakes
  • 1 tsp ground nutmeg
  • 2 T soy sauce
  • salt and pepper

Pulse in food processor:

  • 1 c rolled oats (pulse first)
  • 1.5 c cooked brown rice
  • 1 15 oz can white beans (or any beans) and .25 c reserve bean liquid

Drain vegetables (ideally, roll into a towel and squeeze out excess water). Add to food processor and pulse until combined. Refrigerate (ideally at least a couple of hours). Form into patties and bake at 375 for 20-25 minutes, flipping halfway. Broil each side for 1-2 minutes to crisp up.
