This sausage alternative is great with a tofu scramble, or vegan quiche, or as part of a breakfast sandwich (maybe with a chickpea flour omelette).

3.5 c water

1/4 c tamari

1/4 c nutritional yeast

1 T onion powder

.5 T garlic powder

1 T dried rosemary

1 T fennel

1 tsp thyme

2 tsp sage

1 tsp paprika

red chile flakes

1 tsp salt


1/4 tsp cayenne pepper

2 tsp maple syrup

1/2 tsp liquid smoke

2 packages tempeh, crumbled (could replace with tofu or cauliflower, mushrooms, and /or walnuts)

1 c oats

1/4 c brown rice flour

  1. Combine all ingredients.
  2. Simmer in a saucepan until liquid evaporates.
  3. Either keep as crumbles or shape into patties and put on a baking sheet covered in parchment paper.
  4. Bake at 350 for 20 minutes (stir or flip halfway).
