This is easy to make but you end up with a lot of dishes to wash.

Make some quinoa. The ratio is twice as much liquid as quinoa, then simmer for 15-20 minutes until the liquid is absorbed.

Dice up a sweet potato and spice it up with salt, pepper, cumin, chili powder, and maybe garlic powder, onion powder, and oregano. Roast it at 450 degrees until soft (30 minutes or so). You could add a diced onion, diced bell pepper, garlic, and diced jalapeno. Or whatever veggies you’d like!

Steam some broccoli.

Simmer a can of black beans with similar spices.

Chop up some kale.

Toast up some pumpkin seeds.

I made a tahini sauce by blending:

-6 T tahini

-juice of 2 lemons

3 cloves garlic

-4 T date syrup (or more to taste); can also use maple syrup

-1/3 c water

Then just put it all together.
